    Now you're talking, St Bede's used to serve us Spam fritters in batter with a hot tomato sauce/gravy for dinner. Lovely.

    Spam fritters - food of the Gods! My Mum used to cook them in our chip pan, which was also used to cook fried bread. It was full of lard, which was left in and allowed to harden after each use. Any black bits would be scooped out with a slotted spoon. About once a year she would replace the lard, whether it needed it or not.

    My mum had a frying pan like that, bacon and egg double deckers with the bread dipped in the fat. Paradise.

    In those days the fat from the bacon could cook a full English, not the emulsified stuff they call bacon today, as you say Paradise.

    You can get that bacon, but you have to go to a butcher's not a supermarket.

    I thought they all pumped water into bacon to give it extra weight, apart from Keelham Farm I don't know a butchers in Bradford anymore.

    I don’t know if they do this bacon you speak of but there’s a butchers in the shop at Tong Garden centre. Like to load up on mixed grills there in the summer :)

    There was a traditional butchers in Scholes prior to lockdown. Not been up there much recently, mind.

    Dry-cured bacon is the answer.

    But if you don't know a butcher, you'll be paying a lot of money at a premium supermarket for dry cured.

    There's one opposite Daisy's Kitchen just past Thackley Corner but you're right there are very few about now around Bradford.

    That brings back fond memories of bread fried in proper bacon fat... Must try that again one day, as I do have a good source of bacon here. Yes, it has to come from a butcher's or a good deli; the supermarket stuff is generally not worth it.
